We make our cold smoked salmon by hand, in small batches, following a unique family recipe that has been carefully honed over time. This recipe isn’t just a method — it’s a reflection of our values: spirit, passion, and an unwavering respect for quality.
Every fillet we produce starts with sourcing. We choose only fresh Atlantic salmon raised in the cold, pristine waters off the Canadian coast. These salmon are raised without antibiotics, hormones, or pesticides, resulting in clean, natural flavour and optimal texture. From there, we go one step further by selecting only the prime loin cut of each fillet — the most tender, flavorful portion, often referred to as the “royal” or “tsar” cut. It’s this deliberate choice that sets the stage for everything that follows.
Before the curing begins, each fillet is carefully hand-trimmed to remove excess fat and most of the greyish-brown bloodline that can dull flavour and affect texture. What remains is a clean, vibrant piece of salmon — uniform in taste, beautiful in presentation, and ready to be transformed. Our curing process is slow and steady, spanning nearly a full week. We use only all-natural ingredients — no additives, artificial flavours, or preservatives — and apply our signature cure, to enhance texture, depth and complexity without overpowering the natural character of the fish.
Once cured, the salmon is cold smoked using a unique smoking method that gently coaxes out a mild, refined smokiness. The result is a delicately balanced product with a silky, buttery texture and a lingering, luscious finish that keeps you coming back for another slice. From the first cut to final packaging, each step is completed by hand, with attention to detail and a level of care that industrial-scale producers simply can’t replicate.
